Definition
Under a supervisor in a state department or institution, supervises the operation and maintenance of two (2) or more dining rooms, including the proper service of food, the maintenance of proper standards of order and cleanliness, and the assignment of employees; does related work as required.
Examples of work
- Instructs, assigns, and supervises the work of patients, inmates, and other employees engaged in setting tables, working on steam tables, serving food, waiting on tables, scraping and washing dishes, and in washing, cleaning and polishing floors, tables, and equipment in two (2) or more diningrooms.
- Organizes and controls the orderly distribution of services and facilities within the diningrooms.
- Makes reports of meals served, time spent by assistants, and the condition of table linen, dishes, utensils, and silverware.
- Makes recommendations designed to improve the service of food.
- Prepares reports of the dining room services.
- Maintains the essential records and files.
- May be required to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
Experience
Two (2) years of experience in general institution kitchen and dining room work, one (1) year of which shall have included supervisory responsibility.
License
Appointees will be required to possess a driver's license valid in New Jersey only if the operation of a vehicle, rather than employee mobility, is necessary to perform the essential duties of the position.
Knowledge, skills and abilities
- Knowledge of the measures effective in maintaining proper standards of order, cleanliness, and sanitation in food preparation and serving areas, including the diningroom.
- Knowledge of the materials which can be used economically for holiday and other decorative purpose.
- Knowledge of food service procedures appropriate for a cafeteria serving meals to several hundred persons.
- Ability to assign, instruct, and supervise food service and diningroom operations and to make such reassignments as may be required.
- Ability to work effectively with associates and with the members of the public using the cafeteria and/or other diningroom facilities.
- Ability to prepare accurate daily records of food and supplies used and ordered, and individual records of time for employees.
- Ability to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
- Ability to read, write, speak, understand, or communicate in English sufficiently to perform the duties of this position. American Sign Language or Braille may also be considered as acceptable forms of communication.
