Definition
Under supervision of a supervisory official in a correctional facility, in the Department of Corrections, coordinates, plans, trains and oversees inmates; as required assigns tasks to subordinate employees and takes the lead in the work activities in the area(s) of breads, buns, rolls and other bakery products at the regional bakery; does related work as required.
Examples of work
- Organizes assigned baking trades instruction and production work, and develops effective work methods.
- Gives training in the production of white, whole wheat, and rye breads, buns, and rolls and other bakery products for use in state institutions.
- Instructs inmates in the weighing and mixing of ingredients, using established formulae stressing strict adherence to the formulae.
- Instructs inmates in the cutting of dough for molds of the proper weight and in the baking of breads, buns, and rolls and other bakery products in gas fired ovens.
- Maintains proper baking schedules.
- Recommends changes in formulae to improve the quality of baked goods.
- Instructs inmates in the proper use, care, and maintenance of bakery equipment, including gas ovens, mixing machines, scales, slicers, and wrappers; sees that bakery tools, equipment, machines, and supplies are kept in a clean, sanitary, and safe operating condition at all times.
- Makes accurate estimates of the amounts of flour, shortenings, and other baking ingredients required; makes daily requisitions of ingredients.
- Prepares inmate and work progress reports; assists in calculating costs and carries on assigned cost and quality control programs; maintains cost records.
- Takes the measures necessary to ensure the care, custody, and safety of inmates; provides instruction in safe practices; takes the lead in accident prevention measures and programs and in the elimination of hazards; enforces safety rules and regulations.
- Prepares inmate progress, time, cost, work progress, and production reports.
- Maintains essential records and files.
- Will be required to learn to utilize various types of electronic and/or manual recording and computerized information system used by the agency, office, or related units.
Experience
Three (3) years of experience as a baker in a commercial bakery.
License
Appointee will be required to possess a driver's license valid in New Jersey only if the operation of a vehicle, rather than employee mobility, is necessary to perform the essential duties of the position.
Knowledge, skills and abilities
- Knowledge of modern commercial bakery organization, methods, procedures, equipment, machines, tools, and materials, and of the baker's trade.
- Knowledge of mixing techniques and machines and of the ingredients and proportions of ingredients used in preparing dough for white, whole wheat and rye breads, buns, rolls, and other bakery products.
- Knowledge of the problems involved in maintaining established bakery schedules for a large regional bakery.
- Knowledge of approved standards of basic bakery sanitation and cleanliness.
- Knowledge of the basic formulae used in commercial bakeries and skill in the measuring of flours, shortenings, and other ingredients.
- Knowledge of the proper methods used in mixing various types of doughs.
- Knowledge of the proper baking temperatures used for varied types of bakery products and of the regulation of gas fired ovens.
- Ability to analyze large scale bakery and baking trade instruction problems, organize assigned work, and develop effective work methods.
- Ability to take the lead over subordinate staff.
- Ability to assign and instruct inmates and others assigned to the bakery and oversee the performance of their work.
- Ability to develop realistic bakery production schedules and to see that deadlines are met.
- Ability to make such changes in basic bakery formulae as may be required for a better product.
- Ability to establish and maintain cooperative working relationships with supervisory officials, instructors, institution staff members, and others interested in or concerned with the baker's trade program.
- Ability to take the established measures required to ensure the care, custody, training, and safety of inmates assigned to the regional bakery.
- Ability to prepare clear, sound, accurate, and informative reports of the bakery program.
- Ability to maintain accurate records and files, materials used, costs, inmate progress, and production.
- Ability to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
- Ability to read, write, speak, understand, or communicate in English sufficiently to perform the duties of this position. American Sign Language or Braille may also be considered as acceptable forms of communication.
