Definition
Under direction of a Supervising Institutional Trade Instructor or other supervisory official, coordinates, plans, trains, and assigns work involving food processing industry operations to inmates; assigns tasks to lower grade employees; does other related duties as required.
Examples of work
- Organizes, trains, participates in, and assigns work to inmates and employees in the use and/or maintenance of food processing equipment including mixers, grinders, slicers, stuffers, breading and battering equipment, formers, cutters, and washers.
- Trains inmates and employees in all phases of the food processing industry including use of equipment, processing, formulation, and packaging.
- Assumes responsibility for inmate safety by instructing them in safe practices, by taking the lead in accident prevention measures and programs and in eliminating hazards, and enforces safety rules and regulations.
- Will be required to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
Experience
Three (3) years of experience in areas of product formulating including but not limited to processing of raw materials, and the cutting, packaging, shipping, storing, distributing and sanitizing of food products and plant equipment in a commercial or institution kitchen.
License
Appointees will be required to possess a driver's license valid in New Jersey only if the operation of a vehicle, rather than employee mobility, is necessary to perform essential duties of the position.
Knowledge, skills and abilities
- Knowledge of the operation and maintenance of food processing methods, techniques, and organization.
- Ability to instruct and assign work to inmates assigned to the food processing industry.
- Ability to provide vocational training to inmates.
- Ability to take approved measures required to ensure the health, custody, welfare, and training of assigned inmates.
- Ability to prepare statistical, inmate progress, and other reports.
- Ability to maintain records and files.
- Ability to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
- Ability to read, write, speak, understand, and communicate in English sufficiently to perform duties of this position. American Sign Language or Braille may also be considered as acceptable forms of communication.
