Definition

Under a Food Service Supervisor 2, in a state hospital, institution or agency with a resident, patient, or student population of 900 to 2500, assists in the general supervision of the food service unit, does related work as required.

Examples of work

Assists with the economical and professional management of the food service unit of a State institution. Acts as professional assistant to the Food Service Supervisor 2 and assumes the immediate responsibility for the management of a major function of the food service department, including special diets and the staff concerned with their preparation. Supervises the work operations and/or functional programs and has responsibility for employee evaluations and for effectively recommending the hiring, firing, promoting, demoting and/or disciplining of employees. Prepares menus in line with the recommendations of the mederdical staff and the food budget. Instructs, assigns and supervises the employees, patients, students, and/or inmates engaged in handling, storing, preparing and serving food. Makes inspections of facilities, equipment and personnel. Collects and reports information concerning certain phases of the operation of the food service department. Assumes the responsibilities of the Food Service Supervisor 2 in his absence. Sees that food storage, preparation and serving areas are maintained in a clean, neat, orderly, sanitary and safe condition. Prepares clear, sound, accurate and informative reports of the food service department containing findings, conclusions and recommendations. Assist in maintaining the food service department records. In the Department of Human Services, may be required to undergo fire training classes. Will be required to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office or related units.

License

Appointee will be required to possess a driver's license valid in New Jersey only if the operation of a vehicle, rather than employee mobility, is necessary to perform the essential duties of the position.

Knowledge, skills and abilities

Knowledge of modern dietetics and food management. Knowledge of food cost accounting. Knowledge of modern methods, materials, processes, equipment, and appliances used in large scale food management units. Knowledge of the health, safety, and efficiency standards of kitchen and personnel. Ability to estimate the quality and quantity of food material. Ability to develop adequate, economical and attractive menus. Ability to plan, organize and supervise the work of food preparation and food service employees. Ability to plan special diets and menus. Ability to prepare quantity and cost estimates. Ability to prepare correspondence and reports and maintain files. Ability to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office or related units. Ability to read, write, speak, understand, or communicate in English sufficiently to perform the duties of this position. American Sign Language or braille may also be considered as acceptable forms of communication. Thirty (30) semester hour credits are equal to one (1) year of relevant experience. Eight (8) years of professional experience as supervisor of the planning, preparation, or delivery system of a food service operation. OR Possession of a bachelor's degree from an accredited college or university; and four (4) years of the above-mentioned professional experience. "Professional experience" refers to work that is creative, analytical, evaluative, and interpretive; requires a range and depth of specialized knowledge of the profession's principles, concepts, theories, and practices; and is performed with the authority to act according to one's own judgment and make accurate and informed decisions.
