Definition
Under the direction of a supervisory official in the Department of Human Services or Corrections, monitors the management phase of nutrition, menu planning and/or food service operations in the State institutions; develops, plans and initiates nutrition and/or food management systems and procedures; assists in training and/or provides informational sessions for food service staff; supervises the Department's nutrition and/or food management system; does related work as required.
Examples of work
- <b><i>In the Department of Human Services:</i></b>
- Observes and analyzes existing nutrition and food management practices in the various institutions and makes recommendations to establish practices and procedures that meet satisfactory operating standards in the information management systems.
- Inputs and accurately maintains nutrition and food service information in the information management system for dissemination to the nutrition and food service departments in institutions.
- Coordinates nutrition and food contracts and ensures product information is made accessible for institution use.
- Provides continuous training to nutrition and food service staff in the use of the information management systems.
- Participates in the development of the standardized menu and ensures that the menu is implemented through the information management system to all institutions.
- Cooperates with Information Technology Department to ensure all software and hardware is available and operating properly for nutrition and food service staff in the institutions.
- Assists the institutions in designing and implementing nutrition programs and meal patterns to accommodate the needs and preferences of populations and sub-population groups.
- Prepares clear, accurate reports containing facts, findings, and recommendations.
- Will be required to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office or related units.
- <b><i>In the Department of Corrections:</i></b>
- Conducts site visits; observes and analyzes existing food management practices and provides recommendations for changes and improvements as required.
- Reviews regular and medical diets for nutritional adequacy and program compliance periodically and/or whenever a substantial menu change is implemented.
- Documents menu reviews.
- Assesses and monitors the servicing of therapeutic and special diets.
- Provides diet counseling and clinical consultation as requested.
- Assists Food Service Supervisor in planning ingredients, and standardizing recipes and menus to meet nutritional requirements.
- Develops and implements policies and procedures relevant to food service operations as it relates to nutritional practices and services.
- Maintains standards and regulations of the National Commission on Correctional Health Care (NCCHC) and other regulatory agencies pertaining to nutrition and menus.
- Develops and implements informational sessions for management and food service staff relative to nutritional issues and special diets.
- Assists the institutions in designing and implementing nutrition programs and meal patterns to accommodate the needs and preferences of populations and sub-population groups.
- Prepares clear, accurate reports containing facts, findings, and recommendations.
- Will be required to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office or related units.
Education
Graduation from an accredited college or university with a Master's degree in Nutrition, Food Service Management, Dietetics, Food Science, Food Technology, Home Economics, or other areas related to nutrition.
Experience
Three (3) years of experience in the development and planning of nutrition and food information management systems and procedures, and/or the design and implementation of plans and meal patterns.
License
Appointee will be required to possess a driver's license valid in New Jersey only if the operation of a vehicle, rather than employee mobility, is necessary to perform the essential duties of the position.
Knowledge, skills and abilities
- Knowledge of the principles of nutrition and medical nutrition management.
- Knowledge of the management aspects of institutional nutrition and food service operations.
- Knowledge of food cost accounting procedures.
- Knowledge of the principles of menu planning and writing of food specifications.
- Knowledge of the policies, procedures, standards and regulations pertaining to nutrition and food service operations.
- Knowledge of sanitary and safe food handling standards.
- Ability to establish and maintain cooperative working relationships with those interested or involved in the work of the unit.
- Ability to develop and implement training programs with nutrition and food service staff in the institutions.
- Ability to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office or related units.
- Ability to read, write, speak, understand, and communicate in English sufficiently to perform the duties of this position. American Sign Language or Braille may also be considered as acceptable forms of communication.
