Definition

Under direction, has charge of the economical and professional management of all functions, services, facilities and personnel associated with the storage, preparation, distribution and service of food for a nutrition program for the elderly; coordinates supporting social services activities; does other related work.

Examples of work

• Plans and supervises the operation of a nutrition project for the elderly.
• Establishes and responsible for system of collecting and recording meal payments.
• Supervises food preparation and related foodservice functions.
• Conducts interviews of program participants to record characteristics required for reporting purposes.
• Maintains and controls the proper sanitary and safety conditions in the preparation, storage, and transportation of hot and cold food components in a home delivered meal program.
• Establishes, maintains, and controls food service records and files related to food delivery, preparation, service, costs and inventories.
• Establishes and responsible for a system of ordering meals for daily delivery.
• Collects and stores data and responsible for preparation of recurring and special reports on characteristics of participants in nutrition program.
• Works with project staff to promote participation of elderly participants in nutrition program through coordination of outreach activities.
• Establishes work schedules, provides assignments and instruction and supervises the work performance of staff.
• Oversees the preparation of menus and special diets.
• Provides recommendations for training personnel.
• Will be required to learn to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.

Experience

One (1) year of supervisory experience in the preparation and service of food in large quantities in a large-scale food operation or in the supervision of a cafeteria or dining room facility and/or of a home delivered meal program.

License

Appointees will be required to possess a driver's license valid in NJ only if the operation of a vehicle, rather than employee mobility, is necessary to perform essential duties of the position.

Knowledge, skills and abilities

• Knowledge of the methods and practices of large-scale food operations.
• Knowledge of Chapter 12 of the New Jersey State Sanitary Code standards for safe and sanitary packaging and delivery of meals.
• Knowledge of the establishment and maintenance of food service records and files.
• Knowledge of the system of collecting and recording meal payments.
• Knowledge of the problems involved in serving the elderly population.
• Ability to provide assignments and instructions to staff and supervise their work performance.
• Ability to check the preparation of menus and special diets for conformity to specification.
• Ability to work with other staff members to promote participation of elderly participants in nutrition programs.
• Ability to establish and maintain records.
• Ability to utilize various types of electronic and/or manual recording and information systems used by the agency, office, or related units.
• Ability to read, write, speak, understand, and communicate in English sufficiently to perform duties of this position. American Sign Language or Braille may also be considered as acceptable forms of communication.
